The Green Goddess Plate
Easy, Under-25-minute , High-Protein and Meal-Prep Friendly.
Some recipes are just pretty. Others are practical. But this one.. She’s both!
I call her The Green Goddess Plate.
I love a meal creation when it’s also meal-prep friendly, and somehow makes your mood, and digestion all feel better. You know ?
What’s In It
1 cup Peas → High in gut-friendly fiber + prebiotics. Also a great plant protein, and the slight sweetness pairs beautifully with savoury flavours.
300g minced meat → I used grass-fed beef, but you can sub turkey or lamb too.
Lots of parsley + green onions + dill → Detoxifying, bright-tasting, and anti-inflammatory. Your liver loves these two.
¾ cup rice → Good thing about this meal and rice edition is when you cook it and let it cool in the fridge, it forms resistant starch—aka food for your good gut bacteria and great for insulin sensitivity.
Lemon + ACV → These help with digestion, boost enzyme production, and balance flavour.
EVOO → Can’t do without it. Healthy fat and helps you absorb fat-soluble nutrients like vitamin K and beta-carotene in this meal.
Salt and pepper
How to Make It:
Brown the minced meat in a pan with a little salt + pepper. Set aside.
Sauté the peas in the same pan (just 3–4 mins until soft).
Add the cooked rice to the pan, stir to mix with peas.
Return the meat, toss everything gently.
Add parsley, green onions, lemon juice + ACV. Mix it all together.
Finish with a drizzle of EVOO or your fave olive oil.
Pro Tip: Let it cool before storing it in the fridge. This will increases the resistant starch in the rice, a form of fiber your gut will thank you for.
Storing Tips
This stores up to 4 days in the fridge in an airtight glass container. And it gets even better the next day when the flavours deepen.
When you're ready to eat:
It’s delicious as a cold lunch bowl (great on a hot day).
If you prefer a warm bowl , heat on a pan or microwave for 1–2 minutes, no need to overcook.
This is your I want to feel good tomorrow kind of plate. It’s one of those meals doesn’t require a lot of effort but ends up so yummy and filling. I’ll be making this all summer.
